Title:Stuffed brinjals –recipe no. 2
Ingredients: Small brinjals with stems, besan, salt, red chilly powder, jeera powder, grated fresh coconut or dry desiccated coconut & oil
Procedure:
1-Slit the brinjals side ways without actually splitting them.
2-Mix besan salt, red chilly powder, jeera powder & coconut with a spoonful of oil.
3-Stuff the above mix into slit brinjals
4-In a frying pan add little oil and when smoking add the stuffed brinjals to it, stir well, cover the pan and cook on slow flame until brinjals turn brown from all sides.
5-take them into a serving dish and garnish with chopped coriander and serve.

Hello Aigo,
I tried doing this once and ended up with all the stuffing in the pan, just next to the brinjal. I think this stuffing needs a binding agent. Being binding agent besan didn't work for me. So I added roasted ground nut powder to it and yes, it worked. Of course, the taste was a bit different. I will try this once again. I don't remember if I have added little oil to the stuff masala. I think I should try this one. Anyway, after a long time good to see some mouth watering recepies.
So Aigo won the Sindh Colony election without really contesting!! I guess they don't want her to leave without having the pool and putting green.
